Quick and Easy Baked Potatoes in the Microwave...

I love baked potatoes! They are quick, easy, and always filling. The only problem is that when you are baking them in the oven, the quick and easy part goes out the window. Because this mama can only do quick and easy (it keeps me in my happy place), I always do them in the microwave. This is how my parents always did it and I thought it was common knowledge, but recently I was hanging out with some friends and a few of them had never heard of cooking them in the microwave. I decided that if I was to be a good friend, I had to share this knowledge. All of us Mama's like time savers right? Well here is a quick time saver when baking potatoes. It will blow your mind.

Quick and Easy Baked Potatoes in the Microwave...

Ok...


to cook potatoes in the microwave, you only need a few ingredients....


potatoes, clear plastic wrap, a plate, and a fork


Wash the potatoes in the sink. Scrub off any dirt that may be clinging to the potato. Next dry it with a towel. Take your fork and pierce your potato two to three times. I try to pierce it on each side. Then wrap it a few times in clear plastic wrap. You want enough wrap so that you have about three layers around the potato. Place your potatoes on a plate. I usually do four potatoes at a time.

Place your potatoes on the plate and cook in the microwave for 18-20 minutes.

Each microwave oven is different, so you need to stick a knife into the potato to make sure it is done. The knife should slide in easily and you should be able to squeeze the potato without much resistance.

When you pull the plate out of the oven, use an oven mitt. The plate will be HOT. I always seem to forget this and end up jumping up and down in the kitchen as I shake my hand. Learn from me and keep that oven mitt or towel near by :)


Now that you have cooked potatoes, you can top them with whatever you have in your fridge.....salsa, avocados, sour cream, chili, cheese, veggies, etc. Let your creativity and taste buds run wild.


I love this quick meal. It is something I like to fall back on when I need a quick lunch or dinner. It also is a great way to use up leftovers because truly anything can go on top of a potato and taste good...well within reason....you know what I mean.

Swedish Meatball Sandwiches

Earlier this week I was looking through my pantry, trying to decide I what I would make for lunch. As I searched, a craving came upon me....Swedish meatballs...mmmm...I needed to make me some....like right now. Anyone have those cravings that come upon you and you need to make them like right now? Yeah that is what happened with these sandwiches. I looked in my freezer for meatballs, grabbed some goodies from the fridge and pantry and I was ready to make this quick and easy meal.

These sandwiches are creamy and absolutely delish! Serve on hoagie rolls and pair with fries and fruit. Yum! Your family will thank you or at least your taste buds will :)

Swedish Meatball Sandwiches

20 frozen cooked meatballs
1 (8oz.) can mushrooms, drained
1 can cream of mushroom soup
1/2 soup can of milk
8 oz. cream cheese
1 green bell pepper, chopped

Place mushrooms, soup, milk, and pepper in a crock-pot. Give it a good stir to combine the ingredients. Next add meatballs and place block of cream cheese on top. Allow to cook 3-4 hours on low. The cream cheese will soften as it cooks. Once meatballs are cooked through and no longer frozen, give everything a quick stir and serve on rolls.

Morning lovelies! Today I have a yummy cookie recipe for y'all. The boy was wanting to bake some cookies, so he browsed through a few books I had gotten from the library and found this gem of a treat. It is from The Girl Who Ate Everything. This cookbook has tons of scrumptious looking recipes. I can't wait to make more from this book. Keagan was able to make this recipe with little help (he is getting so big). We shared these at our homeschool writing club a few weeks back and they were a big hit! They are totally addicting!

Double Cake Batter Cookies...


Double Cake Batter Cookies

-Cookies-
1 (15.25 oz) yellow cake mix
2 eggs
2/3 cup oil
1/4 cup rainbow sprinkles, plus extra for topping

-Cake Batter Frosting-
6 tbsp. butter, softened
 3 1/2 cups powdered sugar
1 tsp vanilla
3/4 cup vanilla cake mix
4-6 tbsp milk

-Directions-

Preheat the oven to 350'. In a large bowl, combine cake mix, eggs, and oil. Blend well. Fold in sprinkles. Drop by rounded tablespoons onto a greased baking sheet. Bake for 8-10 minutes. The cookies will still be pale in color. Remove from the oven and let them cool on the cooking sheet.

For the frosting, mix butter, powdered sugar, vanilla, cake mix and 4 tbl of milk together in a medium size bowl. Beat until fluffy, adding 1-2 tbl spoons of milk if needed.

Frost cooled cookies and top with sprinkles :)

Mini Pita Pocket Pizzas

 Hello Lovelies! Today I have a fun lunch idea for you in video form. Can I get a woot! woot! I get excited when I have new videos to post:) This is a simple recipe that my kids absolutely love! It reminds me of those little mini frozen pizzas that I lived on as a kid of the 90's. Know the ones I am talking about? Every summer my brother and I ate far too many of these on a daily basis. Well now I have a healthier alternative to curb that pizza craving and not have you running for that takeout menu.

Mini Pita Pocket Pizzas

Let's get to cooking:)




Mini Pita Pocket Pizzas

6 pita pockets
1 8oz can tomato sauce
2 cups shredded mozzarella cheese
Italian seasoning
garlic salt

Place pita pockets on 2 greased baking trays. Spoon tomato sauce onto each pita pocket. One 8oz can should make 6 pita pizzas. Next add seasonings. Top with cheese and any additional toppings you desire.

Bake at 350' for 12-15. Serve with veggies and have a quick lunch to share with the munchkins or make it an easy dinner!
