Easy Peasy Sugar Cookie Bars...

Yesterday I slept really slept I woke up and it was 9:30 in the morning. What!! That never happens. I had woke up super early with a HUGE headache, took some medicine and went back to bed. Those sweet red heads of mine must have known I was exhausted because they quietly red and watched brain pop videos, while Mama slept.

When I finally did get up for the day, I decided we needed to make a sweet treat together. I decided on sugar cookie bars. Have you all tried these before? Oh my gosh! They are so dang delicious. The perfect treat!

This recipe is one of my favorite cookie bar recipes. Enjoy!

Sugar Cookie Bars

1 cup butter, at room temperature
2 cups white sugar
4 eggs
2 tsp vanilla
5 cups all-purpose flour
1 tsp salt
1/2 tsp baking soda

Preheat oven to 375. Grease a cookie sheet with edge (jelly roll pan). In a mixing bowl, cream together butter and sugar until fluffy. Add eggs one at a time. Stir in vanilla. Next add dry ingredients.. Mix until just combined. Spread onto baking sheet. Use hands to really spread out the dough. Spray your hands with some cooking spray to prevent sticking. Bake for 15-20 minutes, until golden around the edges. Once cooled, spread with icing and sprinkles.

Fluffy Buttercream Icing

1/2 cup butter
1/4 cup milk
2 tsp vanilla
4 to 5 cups powdered sugar

combine all ingredients until well blended. Add more or less powdered sugar, according to desired consistency. 

Don't forget to top your bars with cookies. We only had Halloween and Christmas colored sprinkles, so the kids decided to combine the two. We now have a multi colored extravaganza going on. These bars are delicious no matter the color of the sprinkles. :)

Black Bean and Salsa Potato Skillet...

Last Tuesday was busy. I had just gotten home from the library with the kids, Hubby had just finished working out, and we were all really hungry. My original plan for dinner was out the window....I had forgotten to do the prep I had to improvise. I checked out our pantry and fridge and came up with the recipe below. It is super yummy, meatless (so it's frugal), and everyone liked it. Oh and it's ready in under 30 minutes...I love it when that happens :)

Black Bean and Salsa Potato Skillet

1 can (15 oz) black beans
1/4 cup diced jalapeƱos
2 russet potatoes, washed and chopped (skin on)
1/2 yellow onion, diced
1/2 cup shredded carrots
1 12 oz. jar salsa
1 can (15 oz) corn, drained
1/4 cup chopped cilantro
seasoning salt
3 cups water
shredded cheddar cheese and sour cream for topping, if desired

Place potatoes, jalapenos, onion, carrots, seasoning salt, and water in a pan with a lid. Bring to a boil and simmer until potatoes are tender. If water runs out, add more to cook potatoes. Next add in corn, beans, salsa, and cilantro. Cook until heated through. Top with cheese and sour cream if desired. Enjoy!

Quick and Easy Baked Potatoes in the Microwave...

I love baked potatoes! They are quick, easy, and always filling. The only problem is that when you are baking them in the oven, the quick and easy part goes out the window. Because this mama can only do quick and easy (it keeps me in my happy place), I always do them in the microwave. This is how my parents always did it and I thought it was common knowledge, but recently I was hanging out with some friends and a few of them had never heard of cooking them in the microwave. I decided that if I was to be a good friend, I had to share this knowledge. All of us Mama's like time savers right? Well here is a quick time saver when baking potatoes. It will blow your mind.

Quick and Easy Baked Potatoes in the Microwave...



to cook potatoes in the microwave, you only need a few ingredients....

potatoes, clear plastic wrap, a plate, and a fork

Wash the potatoes in the sink. Scrub off any dirt that may be clinging to the potato. Next dry it with a towel. Take your fork and pierce your potato two to three times. I try to pierce it on each side. Then wrap it a few times in clear plastic wrap. You want enough wrap so that you have about three layers around the potato. Place your potatoes on a plate. I usually do four potatoes at a time.

Place your potatoes on the plate and cook in the microwave for 18-20 minutes.

Each microwave oven is different, so you need to stick a knife into the potato to make sure it is done. The knife should slide in easily and you should be able to squeeze the potato without much resistance.

When you pull the plate out of the oven, use an oven mitt. The plate will be HOT. I always seem to forget this and end up jumping up and down in the kitchen as I shake my hand. Learn from me and keep that oven mitt or towel near by :)

Now that you have cooked potatoes, you can top them with whatever you have in your fridge.....salsa, avocados, sour cream, chili, cheese, veggies, etc. Let your creativity and taste buds run wild.

I love this quick meal. It is something I like to fall back on when I need a quick lunch or dinner. It also is a great way to use up leftovers because truly anything can go on top of a potato and taste good...well within know what I mean.

Swedish Meatball Sandwiches

Earlier this week I was looking through my pantry, trying to decide I what I would make for lunch. As I searched, a craving came upon me....Swedish meatballs...mmmm...I needed to make me right now. Anyone have those cravings that come upon you and you need to make them like right now? Yeah that is what happened with these sandwiches. I looked in my freezer for meatballs, grabbed some goodies from the fridge and pantry and I was ready to make this quick and easy meal.

These sandwiches are creamy and absolutely delish! Serve on hoagie rolls and pair with fries and fruit. Yum! Your family will thank you or at least your taste buds will :)

Swedish Meatball Sandwiches

Swedish Meatball Sandwiches

20 frozen cooked meatballs
1 (8oz.) can mushrooms, drained
1 can cream of mushroom soup
1/2 soup can of milk
8 oz. cream cheese
1 green bell pepper, chopped

Place mushrooms, soup, milk, and pepper in a crock-pot. Give it a good stir to combine the ingredients. Next add meatballs and place block of cream cheese on top. Allow to cook 3-4 hours on low. The cream cheese will soften as it cooks. Once meatballs are cooked through and no longer frozen, give everything a quick stir and serve on rolls.
